 This is a sooper (ha, ha) fast and delicious meal that freezes well too!


Part 1

  • 2 lbs organic ground beef (or turkey burger or meat substitute)
  • 1-2 T. or more Red Curry Paste
  • 1 + t. cumin
  • few dashes curry powder
  • Medium-lg sweet potato
  • Large green or red bell pepper
  • 1 can light coconut milk
  • 4 C chicken stock
  • 1 15oz can tomato paste


  1. Brown meat
  2. Whisk curry and cumin into broth
  3. Add to meat with peppers and potatoes (sometimes I add diced tomatoes too)
  4. Bring to boil
  5. Reduce heat, cover and simmer 10 minutes
  6. Add Tomato paste and coco milk
  7. Cook on medium till thickened
  8. Add pepper to taste
